Broccoli Cheddar Soup
Description
A simple and tasty soup that will get everyone to eat broccoli.

Ingredients
- 3 (14.5 ounce) cans of chicken broth
- 3 (10 ounce) packages of frozen chopped broccoli
- 6 tablespoons of margarine
- 1 medium chopped onion
- 1/2 cup of all-purpose flour
- 2 cups of milk
- white pepper to taste
Steps
- Simmer the broth in a large pot over medium heat. Add the broccoli to the simmering broth for 15 minutes.
- In a separate skillet over medium heat, melt the margarine. Add the onion and saute for around 5 minutes or until desired tenderness.
Stir flour into the onion until it becomes a pasty texture and then gradually add milk and stir until thick.
- Add the onion mixture into the pot of brccoli mixture and stir well. Stir in the cheese until melted, making sure that it does not boil.
Season with white pepper.
